There is one for DEF level indication stuck on full requiring a PCM recalibration. The fact that you hit some bumps and the level went back to full suggests a possible bad electrical connection or something in the DEF tank covering the sensor. I have heard of the DEF heater belts dislodging and possibly covering the sensor.
