A blunt weapon ( club) is the best thing to use to harvest polymer from carcasses. Snails also produce polymer if tamed but its a pretty slow rate. The spawn zones for penguin on LI are incredibly small and I've personally never seen one in those areas. Mantis in the desert or crafting from obsidian are your best bet.
